BBQ Pulled Pork Sandwiches
So, the first Sunday I was home for Christmas the Giants were playing, and I felt like eating football food. Football food … well you know what football food is. It may or may not consist of any of the following:
- Wings
- Nachos
- Chili
- Pizza
- Beer (oh wait, that’s not a food)
Anyway, I broke out Mom’s slow cooker and took a trip to Palmer’s to buy a Pork Shoulder Butt.
These were really good. Anything that simmers in sauce for 8 hours is probably going to be good regardless. Serve these with fries and cole slaw (some people put the coleslaw right on the sandwich).
Oh, and Go Giants!
BBQ Pulled Pork Sandwiches
Ingredients:
- 8 soft rolls (kaiser or hamburger rolls)
- 1 pork shoulder butt (about 4 pounds)
- 1 red onion, sliced thin
- 16 oz. barbecue sauce
- 2 cups water
- salt and pepper
Directions:
Season the roast with salt and pepper and whatever other kind of spice/rub you like. Place roast in crock pot or slow cooker and top with onions. Cover roast with water and barbecue sauce and slow cook for 8 to 10 hours. Remove pork, discard layer of fat as well as any water and grease remaining in pot. When pork is cool enough to handle, use a fork or your hands to shred and pull the meat apart.
